Yummy and Easy Fruit Cobbler… 

Hey my Pretty Readers….. It’s been a while since I last posted. I am back with a very easy yummy recipe.

Many times it happens that you get some fruits and forget about them only to find out that they have over ripened and you don’t feel like eating them.

I faced the same dilemma of eating the over ripe fruits or to throw them out. I just remembered about the Peach Cobbler and thought of giving it my own twist.

Without further ado, let’s get started….

Ingredients:

1/4 cup sugar
2 tablespoons cornflour
4 cups sliced or diced fruits(I used Granny smith apples and figs)
2 tablespoons custard powder(optional)
1 cup water

1 cup rice flour
2 tablespoons sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2 tablespoons honey
1/2 cup milk(any type will do)

Just keep in mind to adjust the sweetness by reducing or increasing sugar and honey depending on the sweetness of the fruit.

Directions:

Preheat oven to 400 degrees F.

Combine sugar, cornflour and custard powder and add to a pan.
Add in water and fruits.

Put on heat and bring to a boil.
Stir constantly for a minute as the mixture thickens and comes to boil.

Pour into a baking dish and you may sprinkle little cinnamon on it to enhance the taste.

In a bowl, combine flour, sugar, baking powder, salt and honey.
Stir in the milk until the mixture has a cookie dough like consistency.

Drop spoonfuls of this mixture on the fruit mix(It won’t cover it completely, but will rise and expand as it bakes and will almost cover it)

Bake for 25-30 minutes.
