Hey my pretty readers… I am back with one more yummy healthy recipe.
We all love pancakes. Well here I have a very simple yet healthy and yummy pancake/crepe recipe. And did I say it’s Gluten free… Yes..
So let’s get started..
(makes 7-8 pancakes)
1 cup rice flour
1/4 cup amaranth flour(you can replace this with quinoa flour if you want)
1 cup milk(any type of milk will do)
2 organic eggs
1/2 cup organic honey
1 tsp vanilla essense
1/2 cup peanut butter/nutella
1/2 cup organic jam/preserve of choice
handful of goji berries
handful of sunflower seeds
handful of flax seeds
handful of coconut flakes
handful of choice of fruits
You may increase/decrease the quantity of honey as per your taste.
Mix the rice flour with the amaranth flour. Add in the eggs, vanilla essence, milk and honey. Mix well. Use a whisk and whisk till the mixture is well aired and there are no clumps.
Heat a pan. Ladle up the batter when the pan is nice and hot. One Ladle full is enough for one pancake.
Move the pan around to spread the batter evenly. Once the sides start to brown, very carefully flip the pancake. Once it’s ready, take off the heat.
Spread some palm sugar/honey and jam/preserve/nutella.
Top it off with Goji berries, sunflower seeds, flax seeds, coconut flakes and a handful of fruits of your choice.
You can enjoy it as it is or you can fold the crepes in halves or make a roll.
PS: Your house will be filled with the amazing smell of pancakes….
Top it off with some chocolate syrup if you feel 🙂
