Quick and Easy Breakfast Muffins…

Hey my pretty readers…..

So i am back with yet another easy and quick munch idea…..

Now this is a no brainer and is actually really very very simple. But this is a great idea if you are meal prepping or in a hurry to get to office/school. Or you are just too lazy like me to make anything elaborate…. And the great thing is that you need only 5 mins to prep and then your muffins keep cooking in the oven while you get ready….

So let’s get started…..

Ingredients:

(makes 6 muffins)
1 cup finely chopped onions
1 cup finely chopped tomatoes
1 cup grated cheese(any type will do)
1 tsp olive oil
3 organic eggs
1/2 cup milk(any type will do)
a pinch of pink salt/sea salt
herb mix(oregano, basil, parsley, garlic, thyme and chilly flakes)

Directions:

Preheat oven to 350 degrees F.

Crack the eggs and whisk in a bowl.
Add milk, salt and whisk again until the egg mixture is airy.

Grease muffin molds with olive oil and place them in the muffin tray.

Place some chopped onions, tomatoes and grated cheese one after the other in each muffin mold evenly.

Pour in the egg mixture in each muffin mold evenly.

Sprinkle some herb mix on top.

Bake for 10-12 mins until the muffins fluff and rise.

Serve with some tomato ketchup.
