Banana Cacao Muffins
(makes 6 muffins)
2 cup Amaranth/Rajgira flour
1 tsp vanilla essense
a pinch of pink salt/sea salt
a pinch of baking soda
2 organic eggs
2 overly ripe bananas
1/2 cup raw organic honey
1/4 cup cacao nibs
1 tsp olive oil
You may increase/decrease the quantity of honey as per your taste.
Preheat oven to 350 degrees F.
Combine amaranth flour, cacao nibs, pink salt/sea salt, baking soda and mix well.
In a separate bowl, mash bananas and whisk together with eggs, olive oil, vanilla essence and honey.
Add the wet ingredients to the dry ones and mix together until the batter is well combined.
Stir in walnuts/raisins/cherries as per your choice.
Grease muffin molds with olive oil and place them in the muffin tray. Pour the batter in.
Bake for 35 minutes or until muffins are ready.
PS: If toothpick inserted in the middle of the muffin comes out clean, it means your muffins are ready…..
Top it off with some chocolate syrup if you feel 🙂
